Go Local 2009 :: Squashed

I think if I presented my family with another squash or zucchini (no matter how much cheese, tomatoes, or seasoning) I added they were going to throw a full blow walk out.



So what to do?



Steam and puree I say!



These very tasty blueberry lemon muffins are from Deceptively Delicious and just happen to require a 1/2 cup of squash puree.






Now for the other 5 cups ...

oh, man! I wish I was at your house this morning. And I have a MASSIVE zucchini sitting on my counter top. I'm sure there will be leftovers when I'm done making my zucchini skillet, veggie patties and roasted veggie pizza for this week...it's that big.

I grow zucchini in the garden and the only way I like it is in zucchini bread! Any way it's cooked is totally icky to me! So I wash them, grate them, measure out two cups into ziploc baggies and freeze them. When I want to make zucchini bread, I pull out a bag, let it thaw and use it in my recipe, including all the liquid in the bag as well. Nothing better in the middle of winter than zucchini bread from home grown zucchini!
