Ready-Made To The Rescue

You can tell where this is going ... It all started with a pound of fresh spinach and 6 eggs that I got at our local co-op that began last week. I already had a dozen eggs in the fridge. What am I going to do with 1lb of spinach and 18 eggs. Quiche. I used to be pretty handy in the kitchen, baked bread, and could make a pretty decent meal (from a cookbook - he he) ... so I thought I could whip up my own crust, even if I was a little ... rusty.


Thank goodness I already had a pie crust in the fridge or dinner would have been doomed.


I also have lost my knack for preparedness ... The bacon took forever to cook. The cheese had to be shredded. I couldn't find my pie shield (who knows when I used it last). I fumbled with getting the spinach washed and torn for the quiche ... all the while John is babbling, talking, screaming to get out of his crib - he woke early from his nap. Drat!


When it was all said and done, it was delicious. It should have been considering it called for 8 eggs, half and half, sour cream, swiss & mozzarella cheese, and 6 pieces of bacon! We're living large here ... at least the eggs and spinach were organic. smile.

Needless to say, no sewing happened yesterday. I did get to knit 2 rows (whoohoo) after the boys were asleep. I do have a picture of something I finished over the weekend; another of my superheros ...

I remember making capes for my superkids too. of course, Curly Girl's had to be pink or purple and had to have sparkles.......
