Squashed

You are too?



Well when in Rome ... make summer squash muffins!

My boys ate these like they were not going to see food for days. They are so good and wholesome I didn't dare tell them what was in them. Why ruin a serving of veggies?  The recipe is so wholesome:

1 1/2  C whole wheat flour :: 1 C rolled oats (I used whole wheat) :: 1 Tbs baking poweder :: 1/2 tsp salt :: 1 tsp ground cinnamon :: combine all in bowl

1 egg :: 1 C milk :: 1/4 C oil :: 1/4 honey :: in another bowl combine and mix well :: add wet ingredients to the dry and stir until just moistened

1 1/2 C squash (or any berry you like) :: fold in squash :: fill greased muffin tins 2/3 full :: sprinkle top with cinnamon sugar :: bake at 400 degrees for 15 - 20 min

Heather Jane from Living Senses blogged about Simply in Season (where this recipe came from) so of coarse I had to check it out. She confirmed for me that yes, I should really get this cookbook. That's all I needed to hear to justify a purchase. I'd go ahead and get a copy if I were you ... so you don't end up squashed too!

They look yummy! What a cool way to use squash. I only like it fried but I bet I would love it this way!

I am going to have to check out that book.

Must check this out -- my CSA is due in on Thursday and I'm sure to be stumped for ideas.

super awesome because i have raspberries and blackberries that need to be used ASAP... and whole wheat flour in the freezer to boot!

Ahhh, thanks for reminding me of how I can get some squash into those little tummies at my dinner table!
