Do The Mash

 ... the potato mash!


We had an abundance of potatoes from the past two weeks of our CSA and I knew I need to do something before they rotted. I decided to make a huge batch of mashed potatoes and freeze what we didn't. I started with what amounted to (cut up) 8 cups of potatoes. After boiling and mashing I tapped into my inner Paula Deen and got to work. I used a large table spoon for my measuring ... so in other words - I didn't really measure. There was about 3 large spoonfuls of unsalted butter (that makes it OK right?!), 3 spoonfuls of fat free sour cream (again - let's keep the illusion of healthy cooking going), and a heavy pour of 2% milk. After getting the consistency I was hoping for (creamy but with lumps) I added my secret ingredient. My go to when I want something to be delish. If you don't have this in your pantry, you should. It is the most versatile spice blend I've ever used. We add it to veggies, fish, potatoes (obviously), and eggs. It's worth the cost + shipping to add it to your stock of goodies. I gave it away as Christmas presents last year - that's how much I (((love))) it.

We gobbled up quite bit that night but I still had enough left over to put two containers into the freezer. I use a dry erase marker to write on the lids so there are no surprises come fall. I think I'm going to chuckle each time I open my freezer and get a peek at this ...

I love mashed potatoes. Really I do. My freezer is stuffed with frozen strawberries and lots of freezer jam. I know I'll appreciate that all winter long.

The two things in my freezer that popped into my head were rhubarb and baked beans. The rhubarb came from a friend who had an over abundance and the baked beans were leftover from our 4th of July celebration. I used to write on my container covers too but now I use stickers, they are much easier to remove!

Mashed potatos is one of my very favorite foods. So yummy!
Right now we have some sockeye salmon and a little bit of cod in a freezer. No veggie's or berries yet, still waiting for those to ripen.

chocolate chip cookies, homemade of course! My husband is so easy to please when it comes to cooking, but he does love to have two chocolate chip cookies every night at 10:00. So when there are only a few left in the freezer, I know it's time to bake again! I make a triple batch of the Nestle toll house recipe all at once (love my Bosch mixer!) and put 4 zip lock bags of cookies into the freezer for his leisurely enjoyment!

Oh yes, and I buy bread at our local Nissen thrift store for about half of what I would pay at the grocery store, and I stock one shelf in my freezer with that.

A little ice cream and a few Popsicles for this hot weather too!

Didn't know you could freeze mashed potatoes! Very interesting!

I am really getting jealous of people who have CSA boxes. Just saying.

Great idea! My freezer is full of a bunch of stuff that is so old and freezer burned. Oh my, it needs to be cleaned out. Thanks for reminding me. ;)

I never thought about freezing mashed potatoes. You can buy them in the store, so I should have figured, but it never has occurred to me. What a good idea for types that don't store well. I think my red potatoes are getting close to being ready for digging....
